5-Ingredient Peanut Butter Cookies

Peanut Butter is one of my favorite “go-to” power house foods that I enjoy for quick energy, protein and fiber. I put together peanut butter in a simple snack with a little naughtiness of dark chocolate, but quite frankly, I eat dark chocolate almost every day so I accomplish getting my power food and chocolate all at one time. This one bowl cookie will amaze you and satisfy for hours.

1 cup all natural peanut butter at room temp

1/2 cup raw wild organic honey

1 large organic egg

1/2 tsp baking soda

1/2 bag dark chocolate chips (65% cocoa)

Preheat oven to 350, and in a large mixing bowl beat one egg, add peanut butter, honey and continue mixing until well combined. Add baking soda and stir until thoroughly mixed. Stir in chocolate chips. Bake on unprepared stoneware, or parchment line baking sheet for 9-12 minutes. Yields 15 cookies

The Truth about Peanut Butter

I used to love a PB & J sandwich as a kid and heading into adulthood, so much negative hype over peanut butter being high in fat and a contributor to weight gain just like candy bars and doughnuts caused many to shy away from the product. I am bringing peanut butter back full circle into the GOOD and acceptable foods to eat for weight loss, and the truth about this fabulous nut butter is it contains healthy fats, protein, and fiber that our bodies require. With approximately 200 calories per serving containing 2g of fiber and 8g of protein, peanut butter fills you up so we eat less but are satisfied for hours. In fact, a tablespoon of peanut butter licked straight from the spoon is not only indulgent, but studies have shown that it helps to curb sugar cravings. In addition to the fiber and protein, peanut butter contains vitamin E, muscle friendly potassium, immunity-boosting B6, and heart healthy fats. Peanut butter is healthy for you, filling, and now can be considered a “dieters” best friend. Grab a spoon and enjoy! #peanutbutter #cookies
