This amazing #superfood #taco #salad is delicious and simple to prepare. Utilizing meal prepped or even canned organic shredded chicken makes this recipe a winner. Minimal ingredients with powerhouse nutrients are sure to be a fitness food pleaser.


4oz prepared or canned shredded organic chicken breast

Organic salsa of your choice (roasted garlic is amazing)

½ can organic pinto or black beans

½ fresh avocado cut into slices

¼ cup plain Greek yogurt (sour cream alternative but optional)

Large handful of organic power greens (spinach, kale, and chard)

5 organic seeded crackers (tortilla chip alternative)

Hot sauce of your choice (optional)


Using a single serving salad bowl begin layering by placing a large handful of power greens in the bottom. Warm the chicken in a sauté skillet and sprinkle with optional hot sauce. For those who love spice, add hot sauce to taste. Heat beans in a separate pan or use a microwave safe dish to warm in microwave. Layer the heated chicken onto the greens and add the beans. The salsa is your dressing so add this to your liking. Spoon the plain Greek yogurt over the mixture, add fresh avocado and seeded cracker garnish. Mix all the ingredients until well combined and power greens are coated. Add more hot sauce if desired.
